We mainly have a lighter colored honey and a darker colored honey. But can be shades in between also.
The difference is the colors, is the flowers and trees that the bees forage on. This will depend on the time of the
year
Early "SPRING HONEY", will have more PRIVET in it , causing the honey to be lighter in color.
"FALL HONEY", will have more GOLDENROD in it, causing the honey to be darker in color.
Lighter "SPRING HONEY" tends to be, light and sweet in flavor.
Darker "FALL HONEY" tends to be heavier and more bold in flavor.
Some people may prefer one over the other. And other people just want honey. Give each one a try and find out
which one you might like.
